Cajun Shrimp Stuffed Avocados

2 ripe avocados

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon Cajun seasoning

½ cup cherry tomatoes, halved

¼ cup corn (fresh, frozen, or canned)

¼ cup red onion, finely diced

1 lime, juiced

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Optional: Sliced jalapeño for garnish

Prepare the Shrimp: In a bowl, toss the peeled shrimp with olive oil and Cajun seasoning until well coated. Make sure all shrimp are evenly covered.

    Cook the Shrimp: Heat a skillet over medium heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and let them cool slightly.

      Prepare the Avocados: While the shrimp are cooking, cut the avocados in half, remove the pit, and scoop out a little of the flesh to make more room for the filling. Set the avocado halves aside.

        Mix the Filling: In a mixing bowl, combine the cooked shrimp, cherry tomatoes, corn, red onion, lime juice, and chopped cilantro. Gently fold the mixture to ensure everything is evenly distributed. Season with salt and pepper to taste.

          Stuff the Avocados: Carefully fill each avocado half with the Cajun shrimp mixture, packing it in lightly.

            Garnish: If desired, top with sliced jalapeños for an added kick and extra cilantro for garnish.
