2 pounds chicken wings, rinsed and patted dry

1 tablespoon olive oil

Salt and freshly cracked black pepper, to taste

1 cup grated Pecorino Romano cheese

1 tablespoon freshly cracked black pepper (more for garnish)

4 tablespoons unsalted butter

3 cloves garlic, minced

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. This helps achieve crispy wings.

    Season the Wings: In a large bowl, toss the chicken wings with olive oil, salt, and freshly cracked black pepper until well coated.

      Arrange and Bake: Spread the wings evenly on the wire rack. Bake for 40-45 minutes, flipping halfway through, until they are golden brown and crispy.

        Prepare Cacio e Pepe Sauce: In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the freshly cracked black pepper and sauté for an additional 30 seconds.

          Add Cheese and Lemon: Reduce the heat to low and gradually whisk in the grated Pecorino Romano cheese until creamy. Pour in the lemon juice and mix well. If the sauce is too thick, you can add a teaspoon of reserved pasta water or chicken broth to reach your desired consistency.
