2 cups butternut squash, peeled and grated

1 large egg, lightly beaten

1/4 cup finely chopped fresh sage leaves (or 1 tablespoon dried sage)

1/4 teaspoon ground nutmeg

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Prepare the Squash: Start by grating the butternut squash using a box grater or a food processor. Place the grated squash in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. This step is important to ensure the fritters are not soggy.
