Butternut Squash & Bacon Flatbread

1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes

4 strips of thick-cut bacon, chopped

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1 teaspoon fresh thyme leaves (plus extra for garnish)

1 pre-made flatbread (or your favorite pizza dough)

1/2 cup goat cheese, crumbled

1/4 cup shredded mozzarella cheese

1/4 cup caramelized onions (optional)

A drizzle of balsamic glaze for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Butternut Squash: In a large bowl, toss the butternut squash cubes with olive oil, salt, black pepper, smoked paprika, and fresh thyme leaves. Spread the seasoned squash on a baking sheet lined with parchment paper. Roast in the oven for about 25 minutes, or until tender and slightly caramelized. Stir halfway through for even cooking.

      Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Use a slotted spoon to remove bacon and transfer it to a paper towel to drain excess fat.

        Prepare the Flatbread: If using pizza dough, roll out to desired thickness. Place the flatbread on a baking sheet or preheated pizza stone.

          Assemble the Flatbread: Evenly distribute the roasted butternut squash over the flatbread. Top with crispy bacon, crumbled goat cheese, shredded mozzarella, and caramelized onions if using.

            Bake the Flatbread: Place the assembled flatbread in the oven and bake for 10-12 minutes, or until the cheese is melted and the edges are golden brown.

              Finish and Serve: Remove from the oven and let cool for a couple of minutes. Drizzle with balsamic glaze and sprinkle with additional fresh thyme if desired. Slice into pieces and serve warm.
