1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup almond milk (or any plant-based milk)

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil (for drizzling)

Optional: Fresh parsley, chopped (for garnish)

Optional: Blue cheese or dairy-free ranch dressing (for dipping)

Instructions
 

Preheat the Oven:

    Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

      Prepare the Cauliflower:

        Wash and cut the cauliflower into bite-sized florets, ensuring they are relatively uniform in size for even cooking.

          Make the Batter:

            In a mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually whisk in the almond milk until the mixture is smooth and thick enough to coat the cauliflower.

              Coat the Cauliflower:

                Dip each cauliflower floret into the batter, allowing excess to drip off. Place the coated florets on the prepared baking sheet, giving them enough space to ensure they cook evenly.

                  Bake:

                    Bake in the preheated oven for 20-25 minutes, or until the batter turns golden and crispy.

                      Buffalo Sauce Toss:

                        While the cauliflower is baking, heat the buffalo sauce in a small saucepan over low heat until warmed. Once the cauliflower has finished baking, remove it from the oven and transfer the florets to a large bowl. Pour the warmed buffalo sauce over the cauliflower and toss gently to coat well.

                          Final Bake:

                            Return the sauced cauliflower to the baking sheet and bake for an additional 10 minutes to let the sauce set and the bites become extra crispy.

                              Serve:
