Ingredients

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon ground cinnamon

3 cups old-fashioned rolled oats

1 cup chocolate chips (optional)

1/2 cup walnuts, chopped (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (approximately 2-3 minutes).

Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until fully incorporated.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon until well combined.

Mix Dry and Wet Ingredients: Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Be careful not to overmix.

Add Oats: Stir in the rolled oats until evenly distributed throughout the dough. If you’re using chocolate chips and walnuts, fold them in at this stage.

Scoop the Dough: Using a medium cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Flatten Slightly: Gently press down on each cookie dough ball with the back of a spoon to flatten them slightly. This will help them spread evenly while baking.

Bake the Cookies: Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges turn golden brown but the centers remain soft. Remove from the oven.

Cool on Baking Sheets: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Enjoy: Once cooled, dig in and enjoy your chewy brown sugar cinnamon oatmeal cookies with a glass of milk or your favorite beverage!
