Ingredients
  

1/2 cup popcorn kernels

1/2 cup unsalted butter (1 stick)

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon sea salt (or to taste)

1/2 teaspoon vanilla extract (optional)

Freshly grated nutmeg (optional, for garnishing)

Instructions
 

Pop the Popcorn:

    - Heat a large pot with a lid over medium-high heat. Add 3 kernels of popcorn and cover. Wait until they pop to know that the oil is hot enough.

      - Once the test kernels pop, add the remaining popcorn kernels to the pot and cover. Shake the pot occasionally to prevent burning. When popping slows down to a few seconds between pops, remove the pot from heat and set aside.

        Make the Brown Butter:

          - In a medium saucepan, melt the unsalted butter over medium heat. Continue cooking, stirring frequently, until the butter turns a golden brown color and has a nutty aroma—about 5-7 minutes. Be careful not to burn it.

            - Remove from heat immediately to prevent further cooking and add the vanilla extract if using.

              Mix Sugar and Spice:

                - In a small bowl, combine the granulated sugar, ground cinnamon, and sea salt. Adjust saltiness to your taste.

                  Combine Ingredients:

                    - In a large mixing bowl, add the popped popcorn. Drizzle the brown butter over the popcorn, tossing gently to coat evenly.

                      - Sprinkle the cinnamon-sugar mixture over the buttered popcorn and toss again until well coated.

                        Serve:
