2 cups cooked rice (white or brown)

2 cups broccoli florets (fresh or frozen)

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of chicken soup (or homemade)

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (for added flavor)

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (optional for breadcrumbs)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, blanch it in boiling water for about 2-3 minutes until bright green, then drain and set aside. If using frozen broccoli, allow it to thaw and drain excess water.

      Mix Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli, 1 cup of shredded cheddar cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, black pepper, and paprika. Mix everything together until well combined.

        Prepare the Baking Dish: Grease a 9x13-inch baking dish with cooking spray or a little olive oil. Pour the mixture into the baking dish, spreading it evenly.

          Prepare Breadcrumb Topping (Optional): In a small bowl, mix breadcrumbs with olive oil until they are well coated. This adds a nice crunchy topping. Sprinkle the breadcrumbs evenly over the casserole.
