4 thick bone-in pork chops (about 1 inch thick)

150g Boursin cheese (garlic & herb flavor preferred)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

1 tablespoon fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1 lemon

Prepare the Pork Chops: Preheat your oven to 375°F (190°C). Using a sharp knife, carefully create a pocket in each pork chop. Insert the knife from the side, and make sure not to cut all the way through.

    Stuff the Chops: Take the Boursin cheese and stuff a generous amount into each pocket of the pork chops. Use toothpicks to secure the openings if necessary.

      Season: In a small bowl, mix together the paprika, garlic powder, onion powder, black pepper, and salt. Rub this spice mix all over the pork chops, ensuring they are well-coated for maximum flavor.

        Sear the Pork Chops: In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed pork chops and sear them for about 4-5 minutes on each side until they have a nice golden brown crust.

          Bake: Transfer the skillet to the preheated oven and bake the pork chops for 15-20 minutes or until the internal temperature reaches 145°F (63°C).

            Remove and Rest: Once cooked, remove the skillet from the oven. Squeeze lemon juice over the chops and sprinkle the lemon zest on top. Let the chops rest for about 5 minutes to let the juices redistribute.
