1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

1/4 cup bourbon whiskey

1/4 cup soy sauce

1/4 cup brown sugar (packed)

1 tablespoon apple cider vinegar

2 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 teaspoon sesame oil

1 tablespoon cornstarch (dissolved in 2 tablespoons of water)

1/2 teaspoon black pepper

1 tablespoon vegetable oil

2 green onions (sliced for garnish)

Cooked rice (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the bourbon, soy sauce, brown sugar, apple cider vinegar, minced garlic, ginger, sesame oil, and black pepper. Add the chicken pieces and mix well to coat. Cover and marinate in the refrigerator for at least 30 minutes, ideally 1-2 hours for best flavor.

    Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and add the chicken to the skillet. Cook for about 5-7 minutes, or until the chicken is browned and cooked through, stirring occasionally.

      Make the Sauce: Pour the reserved marinade into the skillet with the chicken. Bring it to a simmer and cook for about 3 minutes. Stir in the cornstarch mixture and cook for another 2-3 minutes, until the sauce thickens.

        Serve: Remove from heat and garnish with sliced green onions. Serve hot over cooked rice, drizzling with extra sauce if desired.
