Bok Choy and Mushroom Stir Fry

4 cups baby bok choy, rinsed and halved

8 oz. shiitake mushrooms, sliced (or any mushrooms of your choice)

1 cup bell pepper, julienned (any color)

1/2 cup carrots, julienned

3 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (or mushroom sauce for vegan)

1 tablespoon sesame oil

1 tablespoon vegetable oil (for stir frying)

1 teaspoon red pepper flakes (optional, for heat)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Ingredients: Start by preparing all the vegetables. Rinse and halve the bok choy, slice the mushrooms, julienne the bell pepper and carrots, and mince the garlic and ginger.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Make sure the oil is hot before adding the next ingredients.

      Sauté Aromatics: Add the minced garlic and grated ginger to the pan. Sauté for about 30 seconds until fragrant, being careful not to burn them.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet and stir-fry for about 3-4 minutes, or until they are soft and lightly browned.

          Add Veggies: Throw in the julienned bell pepper and carrots. Stir-fry for an additional 2-3 minutes until they begin to soften.

            Incorporate Bok Choy: Add the halved bok choy to the skillet. Pour in the soy sauce, oyster sauce, and sesame oil, and toss everything together. Stir-fry for another 2-4 minutes until the bok choy is tender but still vibrant green.

              Add Heat: For an added kick, sprinkle the red pepper flakes into the stir-fry and mix well.

                Serve: Remove from heat, garnish with sliced green onions and sesame seeds. Serve hot over steamed rice or quinoa.
