Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large egg

1 cup buttermilk (or milk with 1 tablespoon vinegar)

½ cup unsalted butter, melted

1 teaspoon vanilla extract

1 ½ cups fresh or frozen blueberries (if using frozen, do not thaw)

Zest of 1 lemon (optional, for added flavor)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.

Combine Wet Ingredients: In another bowl, beat the egg, then add the buttermilk, melted butter, vanilla extract, and lemon zest. Mix well until fully combined.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix—the batter can be lumpy.

Fold in Blueberries: Gently fold in the blueberries, being mindful not to break them up too much, especially if using frozen berries.

Pour into Pan: Pour the batter into the prepared loaf pan. Use a spatula to spread it evenly.

Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, tent it with aluminum foil.

Cool: Once baked, remove from the oven and allow the bread to cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely.

Serve: Slice and serve warm or at room temperature. Enjoy plain, or spread with butter for an extra treat!
