Puff pastry is a marvel of culinary engineering. Its unique texture is achieved by incorporating layers of butter between layers of dough, which create steam when baked. This steam causes the layers to puff up, resulting in a light and flaky pastry that is perfect for various sweet and savory dishes. The versatility of puff pastry makes it an ideal base for our Blueberry Pastry Rings, as it can hold up the filling while providing a delightful contrast to the creamy vanilla cream.

Ingredients

For the Pastry Rings:

1 sheet of puff pastry (thawed)

1 cup fresh blueberries (plus extra for garnish)

1 tablespoon sugar

1 teaspoon lemon juice

1 egg (for egg wash)

1 tablespoon flour (for dusting)

For the Vanilla Cream Filling:

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1 tablespoon cream cheese (softened)

For the Glaze:

1/2 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Prepare the Blueberry Filling:

    - In a small saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook for 5-6 minutes until the berries release their juices and begin to soften, stirring occasionally. Remove from heat and let it cool.

      Make the Pastry Rings:

        - Preheat your oven to 400°F (200°C).

          - On a floured surface, roll out the thawed puff pastry sheet to smooth it out. Cut it into 4-6 equal strips (about 1 inch wide).

            - Twist each strip into a ring shape and seal the ends by pressing them together. Place the rings on a baking sheet lined with parchment paper.

              - Brush each ring with the beaten egg for a beautiful golden color.

                Bake the Pastry Rings:

                  - Bake in the preheated oven for 15-20 minutes, or until golden and puffed. Remove from the oven and allow them to cool completely on a wire rack.

                    Prepare the Vanilla Cream Filling:

                      - In a mixing bowl, whip the heavy cream with the powdered sugar, vanilla extract, and cream cheese until medium peaks form.

                        Assemble the Pastry Rings:

                          - Once the pastry rings are cool, carefully cut the tops off (if they have puffed too high) to create a hollow space for the filling.

                            - Spoon or pipe the vanilla cream filling into each pastry ring, and top with the prepared blueberry filling.

                              Make the Glaze:

                                - In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the filled pastry rings for an extra touch of sweetness.

                                  Garnish and Serve:

                                    - Garnish each pastry ring with a few fresh blueberries on top. Serve immediately or refrigerate until ready to serve.
