Blueberry Cream Cheese Bites

1 cup fresh blueberries

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon lemon juice

1 cup graham cracker crumbs

1/2 cup walnuts, finely chopped (optional)

1/2 teaspoon cinnamon (optional)

2 tablespoons honey (for drizzling)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Beat with an electric mixer on medium speed until smooth and creamy. Set aside.

    Make the Graham Crust: In another bowl, combine the graham cracker crumbs, finely chopped walnuts (if using), and cinnamon (if desired). Mix well.

      Form the Bites: Take a tablespoon of the graham cracker mixture and press it into the bottom of a mini muffin tin to form a crust. Make sure to press it firmly so it holds together. Repeat for all 12 cavities.

        Add Cream Cheese Filling: Spoon about 1 tablespoon of the cream cheese mixture over each graham cracker crust.

          Top with Blueberries: Carefully place 2-3 blueberries on top of each cream cheese layer, gently pressing them in.

            Chill: Place the muffin tin in the refrigerator for at least 2 hours or until the bites are firm.

              Serve: Once set, drizzle a little honey over the top of each bite for added sweetness and garnish with fresh mint leaves.

                Enjoy: Remove the bites from the muffin tin by gently prying them out with a fork or knife. Serve chilled and enjoy the delightful combination of flavors and textures!
