2 cups fresh or frozen blueberries

1 cup cottage cheese (preferably low-fat)

½ cup rolled oats

2 large eggs

½ cup milk (dairy or non-dairy)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

Optional toppings: chopped nuts, a dollop of yogurt, or a sprinkle of powdered sugar

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or a similar-sized oven-safe dish with a little cooking spray or butter.

    Mix Wet Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, milk, honey (or maple syrup), and vanilla extract. Mix well until the ingredients are thoroughly combined.
