Blackberry Balsamic Glazed Pork

Ingredients
  

2 lbs pork tenderloin

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh blackberries

1/2 cup balsamic vinegar

1/3 cup honey

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon fresh rosemary, minced (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, minced (or 1/2 teaspoon dried)

1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)

Fresh rosemary sprigs for garnish (optional)

Instructions
 

Prep the Pork:

    - Pat the pork tenderloin dry with paper towels and season generously with salt and pepper on all sides.

      Sear the Pork:

        - In a large skillet, heat olive oil over medium-high heat. Add the pork tenderloin and sear for about 3-4 minutes on each side until browned. Remove the pork from the skillet and set aside on a plate.

          Make the Blackberry Balsamic Glaze:

            - In the same skillet, add fresh blackberries, balsamic vinegar, honey, minced garlic, Dijon mustard, chopped rosemary, and thyme. Stir well and bring the mixture to a simmer over medium heat. Cook for about 5-7 minutes, allowing the blackberries to break down and the sauce to reduce slightly.

              Return the Pork to the Pan:

                - Place the seared pork tenderloin back in the skillet, turning it to coat with the glaze. Cover and cook for an additional 15-20 minutes on medium-low heat until the pork is cooked through and reaches an internal temperature of 145°F (63°C).

                  Thicken the Sauce (Optional):

                    - If you prefer a thicker glaze, mix the cornstarch with cold water to create a slurry. Add this to the skillet during the last 5 minutes of cooking, stirring constantly until the sauce thickens.

                      Rest and Serve:

                        - Remove the pork from the skillet and let it rest for about 5 minutes before slicing. Serve drizzled with the blackberry balsamic glaze, garnished with fresh rosemary sprigs if desired.
