For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, cold and cubed

¾ cup buttermilk

For the Sausage Gravy:

1 pound breakfast sausage (mild or spicy, based on preference)

¼ cup all-purpose flour

2 cups whole milk

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 teaspoon hot sauce (optional)

For the Pizza Assembly:

2 cups shredded mozzarella cheese

2 large eggs

Chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Make the Biscuits:

      - In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

          - Stir in the buttermilk until just combined. Do not overmix.

            - Turn the dough onto a floured surface and gently knead it 2-3 times. Pat the dough into a ½ inch thick rectangle and cut out rounds with a biscuit cutter.

              - Place the biscuits on a baking sheet lined with parchment paper and bake for about 12-15 minutes or until the tops are golden brown.

                Prepare the Sausage Gravy:

                  - In a large skillet over medium heat, add the breakfast sausage. Cook until browned and crumbled.

                    - Sprinkle the flour over the sausage and stir well to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

                      - Gradually whisk in the whole milk, ensuring no lumps remain. Bring to a simmer, cooking until the gravy thickens, about 5-7 minutes.

                        - Stir in the garlic powder, onion powder, and season with salt, pepper, and hot sauce if desired. Remove from heat.

                          Assemble the Pizza:

                            - Reduce the oven temperature to 400°F (200°C).

                              - Roll out the biscuit dough into a large circle or rectangle, roughly 12 inches in diameter, and place it on a pizza stone or baking sheet.

                                - Spread a layer of the sausage gravy over the biscuit base, leaving a small border around the edges.

                                  - Sprinkle mozzarella cheese evenly over the gravy.

                                    - Use a spoon to create two small indentations and crack an egg into each indentation.

                                      - Bake for 15-20 minutes or until the cheese is bubbly and the eggs are cooked to your preference.

                                        Finish and Serve:

                                          - Once done, remove the breakfast pizza from the oven and let it cool for a couple of minutes.

                                            - Garnish with fresh parsley and serve warm.
