1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 packet taco seasoning (or homemade)

2 cups diced tomatoes (fresh or canned)

1 cup salsa (your preferred spice level)

12 small corn tortillas (cut into quarters)

2 cups shredded cheddar cheese (or a cheese blend)

1 cup sour cream

1/2 cup chopped green onions

Fresh cilantro for garnish (optional)

1 jalapeño, sliced (optional, for heat)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, brown the ground beef until cooked through, about 5-7 minutes. Drain any excess fat.

      Add Vegetables and Seasoning: Stir in the black beans, corn, diced tomatoes, taco seasoning, and salsa. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld together.

        Layer the Casserole: In a 9x13 inch casserole dish, add a layer of tortilla quarters, followed by half of the beef mixture, and then sprinkle with a cup of cheddar cheese. Repeat this layering process with the remaining tortillas, meat mixture, and finish with the remaining cheese on top.
