Ingredients

4 chicken thighs (bone-in, skin-on for flavor)

1 cup long-grain white rice (or jasmine rice)

2 cups low-sodium chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup sliced mushrooms (preferably cremini or button)

1 bell pepper (red or green), diced

1 cup heavy cream or half-and-half

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

1 teaspoon paprika (smoked paprika for extra flavor)

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sear the Chicken:

    - In a large, deep skillet or Dutch oven, heat olive oil over medium-high heat. Season the chicken thighs generously with salt, pepper, and paprika. Once the oil is hot, add the chicken skin-side down. Sear for 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables:

        - In the same skillet, add the chopped onions, garlic, and bell pepper. Sauté for about 3-4 minutes until the onions are translucent. Add the sliced mushrooms and cook for another 2-3 minutes until they start to soften.

          Combine Rice and Broth:

            - Stir in the rice, Worcestershire sauce, dried thyme, onion powder, and garlic powder. Cook for another minute, allowing the rice to toast lightly. Pour in the chicken broth, stir well, and bring to a gentle simmer.

              Nestle the Chicken:

                - Return the seared chicken thighs on top of the rice mixture, skin-side up. Cover the skillet with a lid and reduce the heat to low. Let it simmer for about 25 minutes, or until the rice is cooked and absorbs most of the liquid.

                  Add Creaminess:

                    - Remove the lid, carefully skim off any excess fat from the chicken, and pour the heavy cream over the chicken and rice. Gently stir to incorporate and allow to cook uncovered for another 5-10 minutes. The sauce will thicken slightly.

                      Serve:

                        - Once done, taste and adjust seasoning with more salt and pepper if necessary. Remove from heat and garnish with freshly chopped parsley. Serve hot, with a side salad or crusty bread for a cozy dinner experience.
