Instructions

Cook the Beef:

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Brown the Meat:

Increase the heat to medium-high and add the ground beef to the pan. Cook, breaking it apart with a spoon, until browned and fully cooked (about 6-7 minutes). Drain excess fat if necessary.

          Season the Beef:

Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Pour in the beef broth and simmer for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

              Prepare the Cherry Slaw:

In a large mixing bowl, combine the green cabbage, red cabbage, cherries, grated carrot, and chopped cilantro.

                  Dress the Slaw:

In a small bowl, whisk together the apple cider vinegar, honey, olive oil, and a pinch of salt and pepper. Pour the dressing over the slaw and toss until well combined.

                      Warm the Tortillas:

Heat a dry skillet or pan over medium heat. Warm the tortillas one at a time for about 30 seconds on each side or until pliable.

                          Assemble the Tacos:

To serve, place a generous spoonful of the beef mixture into each tortilla. Top with a scoop of cherry slaw and an optional sprinkle of cilantro. Serve with lime wedges on the side for squeezing over.

                              Enjoy!

Dig into your flavorful Beef Tacos with Cherry Slaw, enjoying the perfect combination of savory and sweet!
