Ingredients

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) tomato sauce

1 tsp dried oregano

1 tsp dried basil

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

3 cups cooked pasta (like penne or ziti)

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish

Instructions

Preheat your oven to 350°F (175°C) and grease a large casserole dish.

In a large skillet over medium heat, add the ground beef, onions, and garlic. Cook, breaking apart the beef with a wooden spoon, until the meat is browned and onions are translucent, about 5-7 minutes. Drain excess fat if necessary.

Add the diced red bell pepper to the skillet and cook for an additional 3 minutes until softened.

Stir in diced tomatoes (with juice), tomato sauce, oregano, basil, Italian seasoning, red pepper flakes, salt, and pepper. Let the mixture simmer for 10 minutes, stirring occasionally.

In a large bowl, combine the cooked pasta, ricotta cheese, and half of the mozzarella cheese (1 cup). Mix well.

Layer half of the pasta mixture in the bottom of the greased casserole dish. Then, pour half of the beef mixture on top. Repeat with the remaining pasta and beef.

Spread the remaining mozzarella cheese and sprinkle grated Parmesan cheese evenly on top.

Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden brown.

Remove from the oven and let it cool for about 5-10 minutes. Garnish with fresh basil before serving.
