Beef Enchilada Casserole

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) red enchilada sauce

1 can (4 oz) diced green chiles

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

8-10 corn tortillas, cut into strips

2 cups shredded cheddar cheese

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.

        Mix Ingredients: Stir in the black beans, corn, enchilada sauce, diced green chiles, cumin, chili powder, smoked paprika, salt, and pepper. Allow to simmer for 5 minutes, allowing flavors to meld.

          Layer the Casserole: In a greased 9x13-inch baking dish, layer half of the tortilla strips at the bottom. Spread half of the beef mixture over the tortillas, then sprinkle with half of the cheddar cheese. Repeat with another layer of tortilla strips, beef mixture, and finish with the remaining cheese on top.

            Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Serve: Allow to cool for a few minutes before slicing. Serve with dollops of sour cream and a sprinkle of fresh cilantro on top.
