Beef And Cheese Chimichangas

Ingredients
  

1 lb ground beef

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp salt

1/2 tsp black pepper

4 large flour tortillas

1 cup refried beans

1/2 cup salsa

2 cups vegetable oil (for frying)

Optional toppings: sour cream, guacamole, fresh cilantro, and sliced jalapeños

Instructions
 

Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

    Add Aromatics: Add the chopped onion and minced garlic to the beef. Sauté for about 3-4 minutes, or until onions are translucent.

      Spice it Up: Stir in the cumin, chili powder, salt, and black pepper. Cook for another 2 minutes until the spices are well combined.

        Mix in Cheese: Remove the skillet from heat. Fold in the shredded cheddar and Monterey Jack cheeses, mixing until melted and combined with the beef mixture. Let cool slightly.

          Assemble the Chimichangas: Place a tortilla on a flat surface. Spread 1/4 cup of refried beans in the center, followed by 1/4 of the beef and cheese mixture. Pour a tablespoon of salsa on top. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Secure with toothpicks if necessary. Repeat with remaining tortillas.

            Heat Oil: In a large frying pan, heat the vegetable oil over medium-high heat until hot (approximately 350°F).

              Fry the Chimichangas: Carefully place 2-3 chimichangas seam-side down into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Repeat for the remaining chimichangas.

                Drain Excess Oil: Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil.

                  Serve: Cut the chimichangas in half and serve hot with sour cream, guacamole, fresh cilantro, and sliced jalapeños as desired.
