3-4 lbs pork shoulder (also known as pork butt)

2 tbsp brown sugar

1 tbsp smoked paprika

1 tbsp garlic powder

1 tbsp onion powder

2 tsp chili powder

1 tsp cumin

2 tsp salt

1 tsp black pepper

1 cup apple cider vinegar

1 cup BBQ sauce (your choice)

1 cup chicken broth

1 large onion, sliced

4-6 hamburger buns

Pickles (for serving)

Coleslaw (optional, for serving)

Instructions
 

Prepare the Pork: Start by trimming any excess fat from the pork shoulder. Pat it dry with paper towels.

    Make the Spice Rub: In a bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, chili powder, cumin, salt, and black pepper. Rub this mixture all over the pork shoulder, ensuring it is evenly coated.

      Set Up the Slow Cooker: Place the sliced onion at the bottom of your slow cooker. Pour the chicken broth and apple cider vinegar over the onions.

        Cook the Pork: Place the seasoned pork shoulder on top of the onions. Cover and cook on low for 8-10 hours or until the meat is incredibly tender and shreds easily with a fork.

          Shred the Pork: Once cooked, remove the pork from the slow cooker and let it cool slightly. Use two forks to shred the meat into bite-sized pieces.

            Mix with BBQ Sauce: Drain excess liquid from the slow cooker, if necessary, then return the shredded pork to the pot. Stir in the BBQ sauce until the meat is well-coated.

              Toast the Buns: If desired, toast the hamburger buns on a skillet or grill until slightly crispy.

                Assemble the Sandwiches: Pile the BBQ pulled pork onto the bottom half of each bun. Top with pickles and coleslaw, if using, and finish with the top half of the bun.
