BBQ Pineapple Chicken Skewers

1 lb (450g) boneless, skinless chicken breast, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1 bell pepper (red or yellow), cut into 1-inch squares

1 small red onion, cut into wedges

1/4 cup soy sauce

1/4 cup brown sugar

2 tbsp apple cider vinegar

2 tbsp olive oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional for spice)

Skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Marinade Preparation: In a medium bowl, whisk together soy sauce, brown sugar, apple cider vinegar, olive oil, garlic, ginger, black pepper, and red pepper flakes until well combined.

    Chicken Marinade: Add the chicken cubes to the marinade, making sure they're well coated. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Assembling Skewers: After marinating, take the chicken from the fridge. Begin assembling your skewers by threading a chicken cube onto the skewer, followed by a piece of pineapple, a piece of bell pepper, and a wedge of red onion. Repeat until the skewer is filled, leaving some space at each end. Aim for about 4-6 pieces of chicken on each skewer.

        Preheat Grill: Preheat your grill to medium-high heat. Grease the grill grates lightly with oil to prevent sticking.

          Grilling the Skewers: Place the skewers on the grill. Cook for approximately 10-15 minutes, turning every few minutes until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and has nice grill marks. If you have leftover marinade, brush it on the skewers during the last few minutes of grilling for extra flavor.

            Serving: Remove the skewers from the grill and let them rest for a minute before serving. Garnish with fresh parsley or cilantro if desired. Enjoy them warm with your favorite dipping sauces!
