Ingredients

2 medium sweet potatoes, peeled and cubed

1 lb boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

1 cup cooked quinoa (optional)

1 cup corn (fresh or frozen)

1 cup black beans, drained and rinsed

1 avocado, diced

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Sweet Potatoes: In a bowl, toss the cubed sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them on a baking sheet in a single layer. Bake for 25-30 minutes, or until tender and slightly caramelized, turning them halfway through.

Cook the Chicken: While the sweet potatoes are baking, prepare the chicken. In a medium skillet over medium heat, add a touch of olive oil. Season the chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F or 75°C).

Glaze the Chicken: Once the chicken is cooked, remove it from the skillet and brush the BBQ sauce generously over each breast. Return the chicken to the skillet and cook for an additional 2-3 minutes, flipping the chicken until the sauce is caramelized and sticky.

Assemble the Bowls: In each serving bowl, layer quinoa (if using) at the base, followed by a generous scoop of the roasted sweet potatoes. Slice the BBQ chicken and place it on top of the sweet potatoes.

Add Toppings: Sprinkle corn, black beans, and diced avocado over the chicken. Finish with a sprinkle of fresh cilantro.

Serve: Serve the bowls with lime wedges on the side for squeezing over the top, adding a zesty flavor.
