Basil Tomato Puff Pastry Bites

Ingredients
  

1 sheet of puff pastry (thawed)

1 cup cherry tomatoes (halved)

1 cup fresh basil leaves (chopped)

1 cup mozzarella cheese (shredded)

2 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 egg (beaten, for egg wash)

Optional: flaky sea salt for finishing

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    On a lightly floured surface, roll out the thawed puff pastry into a rectangle, approximately 1/8 inch thick. Cut the pastry into 2-inch squares using a sharp knife or pastry cutter.

      In a medium bowl, combine the halved cherry tomatoes, chopped basil, mozzarella cheese, olive oil, balsamic vinegar, salt, and pepper. Mix well to combine.

        Place a tablespoon of the tomato mixture in the center of each puff pastry square. Be careful not to overfill.

          Fold the corners of each square towards the center to create a pocket, pinching the edges to seal tightly.

            Brush each pocket with the beaten egg to give it a golden color when baked.

              Arrange the pastry bites on the prepared baking sheet, leaving space between them.

                Optional: Sprinkle a little flaky sea salt on top of each bite before baking.

                  Bake in the preheated oven for 15-18 minutes, or until the pastry is puffed and golden brown.

                    Remove from the oven and let cool slightly before serving. Enjoy warm as a delightful appetizer or snack!
