1/4 tsp nutmeg

2 tbsp cornstarch (for thickening)

Pinch of salt

1/4 cup chopped pecans or walnuts (for garnish)

Fresh mint leaves (for garnish)

Prepare the Base: In a medium saucepan, combine the mashed bananas, almond milk, Greek yogurt, almond butter, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, and salt. Stir well until all ingredients are fully incorporated.

    Thicken the Pudding: In a small bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry. Gradually add this slurry into the banana mixture, stirring continuously to avoid lumps.

      Cook the Mixture: Place the saucepan over medium heat and cook the mixture, stirring constantly, until it starts to thicken—about 5-7 minutes. Once thickened, remove from the heat and let it cool for a few minutes.
