For the Baklava Crust:

1 package (16 oz) phyllo dough, thawed

1 cup unsalted butter, melted

1 cup walnuts, finely chopped

1 cup pistachios, finely chopped

1 teaspoon ground cinnamon

1/2 cup granulated sugar

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup ricotta cheese

3/4 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/4 teaspoon ground nutmeg

For the Honey Syrup:

1 cup granulated sugar

1/2 cup honey

1/2 cup water

1 teaspoon vanilla extract

1 teaspoon lemon juice

1/2 teaspoon ground cinnamon

For Garnish:

Chopped nuts (walnuts and pistachios)

Drizzle of honey

Instructions
 

Prepare the Baklava Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the chopped walnuts, pistachios, ground cinnamon, and 1/2 cup sugar. Set aside.

        - Unroll the phyllo dough on a clean surface and cut it to fit a 9-inch springform pan.

          - Brush the bottom and sides of the pan with melted butter. Layer 8 sheets of phyllo dough, brushing each sheet with butter before adding the next.

            - Evenly sprinkle a thin layer of the nut mixture over the phyllo. Repeat the layering process (8 sheets of phyllo followed by nuts) until all the nuts are used, ending with 8 more layers of phyllo on top.

              - Pour any remaining melted butter on top of the last layer. Bake for 25-30 minutes or until golden brown and crisp. Remove from oven and let cool slightly.

                Prepare the Cheesecake Filling:

                  - In a large mixing bowl, beat the softened cream cheese and ricotta cheese together until smooth. Gradually add the sugar, mixing until well combined.

                    - Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and nutmeg until evenly blended.

                      Assemble the Cheesecake:

                        - Once the baklava crust has cooled slightly, pour the cheesecake filling over the crust, spreading it evenly.

                          - Bake at 325°F (165°C) for 50-60 minutes, or until the center is set but still slightly jiggles. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

                            Prepare the Honey Syrup:

                              - In a saucepan, combine sugar, honey, water, vanilla, lemon juice, and ground cinnamon. Bring to a boil, then reduce heat and let simmer for 10 minutes until slightly thickened. Remove from heat and let cool.

                                Finish the Cheesecake:

                                  - Once the cheesecake has cooled, pour the honey syrup over the top, allowing it to soak in.

                                    - Chill in the refrigerator for at least 4 hours, preferably overnight.

                                      Serve:

                                        - Before serving, top with additional chopped nuts and a drizzle of honey. Slice and enjoy your Baklava Cheesecake!
