Baked Zucchini Chicken Parmesan

2 medium zucchinis, sliced into 1/4-inch rounds

1 lb (450g) boneless, skinless chicken breasts, pounded thin

1 cup marinara sauce (store-bought or homemade)

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (seasoned or plain mixed with Italian spices)

2 large eggs

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Fresh basil for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.

    Prepare the Zucchini: Lay the zucchini rounds on a clean kitchen towel and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture. Pat dry to absorb liquid and set aside.

      Prepare the Chicken: Season the pounded chicken breasts with salt, pepper, garlic powder, onion powder, dried oregano, and dried basil.

        Dredge the Chicken: In a shallow bowl, beat the eggs. In another shallow bowl, place the breadcrumbs. Dip each piece of chicken into the egg, then coat it with the breadcrumbs, pressing gently to adhere.

          Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sear the breaded chicken for 3-4 minutes on each side until golden brown (it does not need to be cooked through). Transfer the chicken to the prepared baking dish.

            Layer Ingredients: On top of the chicken, add a layer of sliced zucchini, and pour the marinara sauce evenly over the top. Sprinkle shredded mozzarella cheese and grated Parmesan on top of the marinara sauce.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
