Baked Salmon with Lemon Butter Cream Sauce

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

Salt and black pepper to taste

1 lemon (zested and juiced)

2 tablespoons fresh dill (chopped)

1 cup heavy cream

2 tablespoons unsalted butter

1 clove garlic (minced)

1 teaspoon Dijon mustard

1 tablespoon capers (drained)

Fresh parsley (for garnish)

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up.

    Prepare the salmon: Place the salmon fillets skin-side down on the prepared baking sheet. Drizzle with olive oil, and season generously with salt and black pepper. Squeeze half of the lemon juice over the fillets and sprinkle lemon zest and chopped dill on top.

      Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork. Use a meat thermometer to check for doneness; the internal temperature should reach 145°F (63°C).

        Make the lemon butter cream sauce: In a medium saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant.

          Add the cream: Pour in the heavy cream, stirring continuously. Allow it to heat through without boiling. Once simmering, whisk in the Dijon mustard, the remaining lemon juice, and capers. Cook the sauce for an additional 3-5 minutes until slightly thickened.

            Finish the sauce: Remove from heat and stir in the fresh chopped dill, adjusting seasoning with salt and pepper as needed.
