Baked Salmon with Lemon Butter Cream Sauce

4 (6 oz) salmon fillets, skin-on

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon capers, drained (optional)

For the Lemon Butter Cream Sauce:

1/2 cup unsalted butter (1 stick), divided

1 cup heavy cream

2 tablespoons lemon juice (freshly squeezed)

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon Dijon mustard

Salt and pepper, to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper. Place them skin-side down on the prepared baking sheet.

      Drizzle with Olive Oil: Drizzle the olive oil over the salmon fillets and rub it in gently to coat them evenly.

        Bake the Salmon: Place the baking sheet in the preheated oven and bake the salmon for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

          Make the Lemon Butter Cream Sauce:

            - In a medium saucepan over medium heat, melt 1/4 cup (half) of the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

              - Pour in the heavy cream and stir well. Bring the mixture to a gentle simmer.

                - Add the Dijon mustard, lemon juice, and zest to the sauce. Mix until well combined. Season with salt and pepper to taste.

                  - Remove the saucepan from heat and stir in the remaining butter until melted and the sauce is creamy.

                    Serve: Once the salmon is done cooking, remove it from the oven. Drizzle the lemon butter cream sauce generously over each fillet. Sprinkle with chopped parsley and capers if using.
