3 medium zucchini, sliced into 1/4-inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper. Mix well until all ingredients are evenly distributed.

      Place the sliced zucchini in another bowl. Drizzle with olive oil and toss to coat each piece evenly.

        Take each zucchini slice and dip it into the breadcrumb mixture, pressing lightly to ensure the mixture adheres well. Place the coated slices on the prepared baking sheet in a single layer.

          Bake in the preheated oven for 20-25 minutes or until the zucchini is tender and the coating is golden brown and crispy.

            Remove from the oven and allow to cool slightly. Garnish with fresh parsley if desired.
