Ingredients

4 halibut fillets (about 6 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

2 tbsp fresh parsley, finely chopped

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/4 tsp salt

1/4 tsp black pepper

3 tbsp unsalted butter, melted

2 tbsp olive oil

Lemon wedges for serving

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Panko Mixture: In a medium bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all the ingredients are evenly distributed.

Prepare the Halibut: Pat the halibut fillets dry with paper towels. This step ensures they will crisp up nicely in the oven.

Coat the Fillets: In a separate small bowl, mix the melted butter and olive oil together. Brush this mixture over the top side of each halibut fillet, ensuring they're well-coated.

Add the Panko Topping: Generously press the panko mixture onto the top of each halibut fillet, creating an even crust.

Bake the Halibut: Place the halibut fillets on the prepared baking sheet. Bake in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.

Serve: Remove from the oven, squeeze fresh lemon juice over the top, and serve hot with lemon wedges on the side. Enjoy your crispy panko-crusted halibut with your favorite side dishes!
