Chicken thighs have garnered a dedicated following among home cooks, and for good reason. Unlike chicken breasts, which can easily dry out if overcooked, chicken thighs retain their moisture and flavor, making them a more forgiving cut of meat. Their slightly higher fat content contributes to a rich, succulent texture that makes every bite enjoyable.

Ingredients

4 bone-in, skin-on chicken thighs

4 tablespoons unsalted butter, melted

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and position the rack in the middle.

Prepare the Marinade: In a mixing bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, paprika, salt, pepper, and lemon juice. Stir until the ingredients are well mixed.

Marinate the Chicken: Place the chicken thighs in a large baking dish or a ziplock bag. Pour the garlic butter marinade over the chicken, ensuring they are well coated. Let it marinate for at least 30 minutes for optimal flavor (you can also marinate it in the refrigerator overnight for a richer taste).

Arrange for Baking: Arrange the marinated chicken thighs skin-side up in the baking dish, pouring any remaining marinade over them.

Bake the Chicken: Bake the chicken in the preheated oven for about 35-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

Broil for Extra Crispiness (optional): If you desire extra crispy skin, switch the oven to broil and cook for an additional 2-3 minutes, keeping a close eye to prevent burning.

Serve: Once done, remove the chicken from the oven, allow it to rest for 5 minutes, then garnish with chopped fresh parsley. Serve with lemon wedges on the side for squeezing over the chicken.
