4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Zest of 1 lemon

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine chopped spinach, feta cheese, cream cheese, minced garlic, red pepper flakes, oregano, salt, pepper, and lemon zest. Mix well until all ingredients are combined thoroughly.

      Prepare the Chicken: Place the chicken breasts on a cutting board. Carefully slice a pocket into the side of each chicken breast, ensuring not to cut all the way through.

        Stuff the Chicken: Generously fill each chicken breast pocket with the spinach and feta mixture. Use toothpicks to secure the opening if necessary, ensuring the filling stays intact.

          Sear the Chicken: In an ovenproof skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts, searing them for about 3-4 minutes on each side until golden brown.

            Bake the Chicken: Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature should read 165°F or 75°C).

              Rest and Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley and serve with lemon wedges for an extra zing.
