Ingredients

1 cup cottage cheese

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon salt

Fresh herbs for garnish (such as parsley or chives)

Instructions

Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish (around 8x8 inches) with cooking spray or a little olive oil.

In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, green onions, garlic powder, black pepper, and salt. Stir until well mixed.

Once the mixture is combined, crack the eggs into the bowl and whisk gently until just blended with the cottage cheese mixture.

Pour the mixture into the prepared baking dish, spreading it evenly.

Bake in the preheated oven for about 25-30 minutes, or until the eggs are set and the top is golden brown. You can test for doneness with a knife; it should come out clean from the center.

Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh herbs before serving.

Cut into squares and serve warm, either as a delicious breakfast or a hearty snack.
