Baked Cinnamon Apple Chips

2 large apples (preferably Honeycrisp or Fuji)

1 teaspoon ground cinnamon

1 tablespoon granulated sugar (optional)

Juice of half a lemon

Parchment paper

Instructions
 

Preheat the Oven: Preheat your oven to 220°F (104°C). This low temperature will help dehydrate the apples without burning them.

    Prepare the Apples: Wash and dry the apples thoroughly. Core the apples and slice them very thinly using a mandolin or a sharp knife, aiming for about 1/8 inch thick.

      Lemon Juice Bath: In a bowl, mix the lemon juice with a little water. As you slice each apple, immediately place the slices into the lemon juice mixture to prevent browning.

        Season the Slices: In a small bowl, mix together the ground cinnamon and sugar (if using). Remove apple slices from the lemon water, and pat them dry with a paper towel. Toss the slices in the cinnamon-sugar mixture until evenly coated.

          Arrange on Baking Sheet: Line two baking sheets with parchment paper. Lay the apple slices in a single layer, ensuring they do not overlap so they can bake evenly.

            Bake: Place the baking sheets in the preheated oven. Bake for about 1.5 to 2 hours, flipping the slices halfway through. The chips are done when they are crisp and slightly curled.

              Cool and Store: Once baked, remove from the oven and let the chips cool completely on the baking sheets. They will continue to crisp up as they cool. Store in an airtight container for snacks later.
