1 pound fresh mushrooms (sliced)

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion (diced)

2 cloves garlic (minced)

1 cup heavy cream

1 teaspoon thyme (dried or fresh)

1 teaspoon salt

½ teaspoon black pepper

¼ cup breadcrumbs

2 tablespoons olive oil

Fresh parsley (chopped for garnish)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add diced onions and garlic, sautéing until translucent, about 3-4 minutes.       Mix Casserole Ingredients: In a large mixing bowl, combine cooked rice, sautéed mushroom mixture, and both shredded cheeses (reserve a handful of cheese for topping). Stir in heavy cream until evenly mixed.
