Baked Apple Fritters

2 large apples, peeled, cored, and diced (preferably Granny Smith)

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup buttermilk (or milk with 1 tsp lemon juice)

1/4 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

1/2 cup raisins (optional)

Cooking spray or parchment paper for baking

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray it with cooking spray.

    In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until well mixed.

      In a separate bowl, mix together the buttermilk, applesauce, egg, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples and raisins (if using).

          Using a spoon or your hands, scoop out portions of the batter and form them into rounds (about 2 inches in diameter). Space them evenly on the prepared baking sheet.

            For a glossy finish, you can brush the tops of the fritters with a bit of melted butter or a sprinkle of cinnamon sugar.

              Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through. They should spring back when lightly pressed.
