1 cup apple cider

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/4 cup unsalted butter, melted and slightly cooled

2 large eggs

1 tsp vanilla extract

1/2 cup buttermilk

For topping: 1/4 cup granulated sugar mixed with 1 tsp ground cinnamon

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray.

    Reduce the Apple Cider: In a small saucepan, bring 1 cup of apple cider to a boil over medium-high heat. Reduce heat to medium-low and let simmer for about 15-20 minutes, until reduced to about 1/4 cup. Allow it to cool slightly.

      Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

        Mix Wet Ingredients: In a separate large bowl, whisk together the granulated sugar, brown sugar, melted butter, eggs, vanilla extract, buttermilk, and the reduced apple cider until well combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill the Pan: Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. You can use a piping bag or a zip-top bag with a corner snipped off for easier filling.

              Bake: Bake the donuts for 10-12 minutes, or until they spring back when touched and a toothpick inserted into the center comes out clean.

                Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack. While they're still warm, toss them in the sugar-cinnamon mixture to coat.
