Bacon and Cheddar Breakfast Burritos

6 large eggs

1 cup shredded sharp cheddar cheese

8 slices of thick-cut bacon

4 large flour tortillas (10 inches)

1/2 cup diced bell peppers (red, green, or yellow)

1/4 cup diced onions

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Salsa or hot sauce for serving (optional)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess fat. After they cool, chop into bite-sized pieces.

    Sauté Vegetables: In the same skillet (draining some of the bacon fat if necessary, but leaving enough for flavor), add 1 tablespoon of olive oil. Add the diced bell peppers and onions and sauté over medium heat until they are softened, about 3-4 minutes. Season with garlic powder, salt, and pepper.

      Scramble the Eggs: In a bowl, whisk the eggs until well combined. Pour the eggs into the skillet with the vegetables and cook, stirring gently, until the eggs are scrambled and cooked through, about 3-4 minutes. Remove the skillet from heat.

        Combine Ingredients: Once the eggs are scrambled, add the chopped bacon and shredded cheddar cheese to the skillet. Stir until the cheese is melted and everything is combined.

          Warm the Tortillas: In a separate dry skillet or on a griddle over low heat, warm each flour tortilla for about 20-30 seconds on each side, or until pliable and warm.

            Assemble the Burritos: Divide the egg mixture evenly among the warmed tortillas. Fold in the sides and then roll up from the bottom tightly to form burritos.

              Optional Toasting: For added texture, you can place the filled burritos back on the skillet with a little olive oil and toast them on each side until golden brown, about 2 minutes each side.
