Ingredients

1 ½ cups all-purpose flour

¾ cup rolled oats

½ cup brown sugar

¼ cup granulated sugar

2 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

1 large egg

½ cup unsweetened applesauce

1 cup milk (or non-dairy alternative)

1 tsp vanilla extract

½ cup chopped walnuts (optional)

¾ cup chocolate chips (dark or semi-sweet)

1 apple, diced (peeled or unpeeled, your choice)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, rolled oats, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Combine Wet Ingredients: In a separate bowl, beat the egg. Then add the applesauce, milk, and vanilla extract. Mix until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Fold in Extras: Gently fold in the chopped walnuts (if using), chocolate chips, and diced apple until evenly distributed throughout the batter.

Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These muffins can be enjoyed warm straight from the oven or stored in an airtight container for up to 4 days. Perfect for breakfast or an after-school snack!
