8 oz (about 225g) fusilli or penne pasta

2 ripe avocados, pitted and scooped

1 cup fresh basil leaves, packed

1/4 cup grated Parmesan cheese

1/4 cup pine nuts (lightly toasted for flavor)

2 garlic cloves, minced

1/4 cup extra virgin olive oil

Juice of 1 lemon

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 small cucumber, diced

1/4 cup red onion, finely chopped

Optional: Crushed red pepper flakes for a kick

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Make the Avocado Pesto: In a food processor, combine the ripe avocados, basil leaves, Parmesan cheese, pine nuts, minced garlic, lemon juice, and a pinch of salt and pepper. Pulse until smooth and creamy. With the processor running, gradually stream in the olive oil until fully incorporated. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, halved cherry tomatoes, diced cucumber, and chopped red onion. Pour the avocado pesto over the pasta and toss gently to combine, ensuring the pasta is evenly coated.

        Serve: If desired, sprinkle with crushed red pepper flakes for added heat. Let the salad sit for at least 10 minutes to allow flavors to meld. Serve chilled or at room temperature.

          Store: Any leftovers can be stored in an airtight container in the fridge for up to 2 days, although fresh is best!
