Asparagus and Lemon Pasta

12 oz spaghetti or your choice of pasta

1 lb fresh asparagus, trimmed and cut into 2-inch pieces

3 cloves garlic, minced

1 medium lemon, zested and juiced

1/2 cup grated Parmezan cheese (plus extra for serving)

1/4 cup extra virgin olive oil

1/4 cup fresh basil leaves, chopped

Salt and pepper to taste

Red pepper flakes, optional for a kick

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Blanch the Asparagus: In the same pot, add the asparagus pieces to the boiling water for about 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and set aside.

      Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Combine Ingredients: Add the blanched asparagus to the skillet, followed by the cooked pasta. Toss well to combine. Stir in the lemon zest, lemon juice, and Parmesan cheese. Gradually add reserved pasta water as needed to create a light, silky sauce.

          Season & Serve: Season with salt, pepper, and red pepper flakes (if using). Fold in fresh basil just before serving. Serve warm, topped with extra grated Parmesan cheese and a slice of lemon for garnish.
