Ingredients
  

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1 cup bell peppers (red, yellow, or orange), diced

1 cup cucumbers, diced

1/2 cup green onions, chopped

1/2 cup cilantro, chopped

1/4 cup edamame, shelled

1/4 cup sesame seeds, toasted

1/2 cup cooked chicken or tofu (optional)

Dressing:

1/4 cup peanut butter

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

1 clove garlic, minced

Salt and pepper to taste

Water, as needed for consistency

Instructions
 

In a large mixing bowl, combine the green cabbage, red cabbage, carrots, bell peppers, cucumbers, green onions, cilantro, edamame, and optional chicken or tofu. Mix well to blend all the vegetables.

    To prepare the dressing, whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, grated ginger, and minced garlic in a separate bowl. If the dressing is too thick, add water a teaspoon at a time until you reach the desired consistency.

      Drizzle the dressing over the salad and toss gently to combine, ensuring all ingredients are well-coated with the dressing.

        Sprinkle toasted sesame seeds on top for added crunch and flavor.

          Allow the salad to sit for about 10 minutes to let the flavors meld before serving.
