For the Meatballs:

1 lb ground chicken or turkey

1/2 cup breadcrumbs (preferably panko)

1/4 cup fresh cilantro, finely chopped

2 green onions, finely sliced

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon fish sauce

1 teaspoon lime juice

Salt and pepper to taste

For the Curry Sauce:

2 tablespoons vegetable oil

1 small onion, finely chopped

1 red bell pepper, thinly sliced

1 can (400 ml) coconut milk

2 tablespoons red curry paste (adjust to taste)

1 tablespoon brown sugar

1 tablespoon soy sauce

1 tablespoon lime juice

Fresh basil leaves, for garnish

Cooked jasmine rice, for serving

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground chicken, breadcrumbs, cilantro, green onions, garlic, ginger, fish sauce, lime juice, salt, and pepper. Mix well until all ingredients are incorporated.

      - Shape the mixture into bite-sized meatballs, about 1 inch in diameter. You should yield approximately 20 meatballs.

        Cook the Meatballs:

          - In a large skillet or frying pan, heat 1 tablespoon of vegetable oil over medium heat. Add the meatballs in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally until they are golden brown on all sides and cooked through. Remove the meatballs and set them aside.
