2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup shredded carrots

½ cup red bell pepper, thinly sliced

¼ cup green onions, chopped

½ cup unsweetened Greek yogurt (or vegan yogurt)

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 tablespoons honey (or maple syrup for a vegan option)

Salt and pepper to taste

¼ cup chopped nuts (such as walnuts or pecans) for garnish

Fresh parsley or mint for garnish (optional)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the julienned apples, shredded green cabbage, red cabbage, shredded carrots, red bell pepper, and chopped green onions. Toss gently to mix all the ingredients well.
