1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

1 large egg

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 tablespoons melted butter

1 medium apple, peeled, cored, and finely chopped (such as Granny Smith)

Additional cinnamon for sprinkling

Maple syrup or honey, for serving

Optional: whipped cream or yogurt for topping

Instructions
 

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

    Prepare Wet Ingredients: In another bowl, whisk the egg until frothy. Add the buttermilk and melted butter; mix well to combine.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to over-mix; a few lumps are okay. Gently fold in the finely chopped apple.

        Preheat the Pan: Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with cooking spray or a little butter.
