Ingredients

4 large flour tortillas

2 cups Granny Smith apples, peeled and thinly sliced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

2 tablespoons brown sugar (adjust to taste)

1 tablespoon butter

1 cup shredded mozzarella cheese (or Monterey Jack for a creamier option)

½ cup cream cheese, softened

2 tablespoons honey (optional for drizzling)

Powdered sugar for dusting (optional)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Apples: In a medium bowl, toss the sliced apples with lemon juice, ground cinnamon, and brown sugar. Set aside to allow the flavors to meld.

Cream Cheese Mixture: In a small bowl, mix the softened cream cheese with a little bit of honey (if using) until smooth and creamy. This will add a delightful layer of sweetness to the quesadillas.

Heat the Pan: In a large non-stick skillet, melt the butter over medium heat until it sizzles.

Assemble the Quesadillas: Spread a thin layer of the cream cheese mixture over one side of a tortilla. Sprinkle a generous amount of shredded cheese over the cream cheese, and then layer on a portion of the spiced apple mixture. Fold the tortilla in half to create a half-moon shape.

Cook the Quesadillas: Place the quesadilla in the hot skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Remove from the skillet and keep warm. Repeat with the remaining tortillas.

Serve: Once all quesadillas are cooked, cut them into wedges. If desired, dust with powdered sugar and drizzle honey on top. Garnish with fresh mint leaves for a touch of color and flavor.

Enjoy: Serve the Apple Cinnamon Breakfast Quesadillas warm, preferably with a side of yogurt or your favorite breakfast drink.
